Ethiopia – Yirgacheffe
Yirgacheffe (pronounced Yer-gah’-cheff-ay), is a highly celebrated coffee growing region in the southern hills of Ethiopia. For centuries, this coffee has been hand sorted and washed to produce a consistently clean and truly remarkable coffee. The distinctive characteristics of Yirgacheffe are a smooth bodied coffee with complex citrus flavors and chocolate overtones.
This particular coffee is the product of the unsurpassed dedication of the Konga Cooperative. The 2400 smallholder farmers in this cooperative cultivate a selection of Ethiopian heirloom varietals that have been transplanted from the forest into small gardens. Cherries are hand-sorted for perfect ripeness, and eventually fully washed and dried on African beds.
Tasting Notes: Spiced earthiness complimented by orange blossom, tropical fruit, and lemon. Wine-like acidity and mild berry notes. Savory finish and lively acidity.
