This coffee is certified organically grown and processed by the classic wet or “washed” method: fruit is removed before drying using traditional ferment-and-wash methods and the beans are sun-dried. This cooperative is located in the Southern Sierra Madre region of Chiapas and its members are extremely loyal—they focus on running a sound, organic business, and ensuring premiums and prompt payments to all member growers.
Who should drink it: A chocolate fragrance with notes of plum and cinnamon. Full body and a sweet lingering finish.
