The only right way to brew coffee
I am frequently asked about the “right way” to brew a cup of coffee. For anyone who has spent much time researching this question, they have undoubtably seen a plethora of opinions that are presented as “the truth.” We obviously have our own opinions about how to do things at Cafe Virtuoso, but here is the point I would like to make; brewing coffee is an art form as much as it is a science. While understanding the variables that affect how your coffee tastes helps one get to a desired result, the truly important thing is WHAT YOU LIKE. So my opinion is: experiment, have fun, don’t listen to the snobs. If you like your coffee with a dollop of unsalted organic butter, then ENJOY without a flicker of remorse!
Tracy Borkum and the Urban Kitchen Group team has done it again…one more beautiful, strategically place, perfect fine dining restaurant. Her newest location, Cucina Enoteca, located in the Flower Hill Plaza in Del Mar, is the sister restaurant of Cucina Urbana, Fish Public, and Cucina Enoteca Irvine. An incredible menu created by Chef Andrew Bachelier features incredible Gnocci Neri with Maine lobster, peas, chili mint emulsion, and delicious Stuffed Zucchini Blossoms with herbed ricotta, opal basil pesto, and cured lemon aioli. All ingredients are locally sourced where their dining team can get it – Suzie’s farm, Crows Pass farm, Bread & Cie, Sadie Rose Bakery, Go Green Organic, Baker & Olive, and Assenti’s Pasta. Social Saturdays incorporates their social media networks with special surprises for customers who say the magic password to their servers.
Borkum believes in spreading the wealth to her community that continues its unwavering support; a portion of Cucina house creation wine is donated to various charities of the month and “Movember” – manly month of November, allows customers to purchase chocolate mustaches for donations prostate cancer research. Thomas Oechel, general manager, Brennan Price & Melissa Calcagni, managers recommend people make reservations to enjoy the family style rustic Italian meal Cucina offers as well as encourages walk-ins to share the community tables. Cucina Enoteca serves Virtuoso Congo as their house blend, Virtuoso Espresso on bar and the delicious Decaf Mexico for those who prefer to fall right to sleep after their incredibly filling meal.
